The doctor caring for you isn't the one who is caring for the potential transplant recipient, and it's not like he earns credit for the number of organs harvested. He does have to explain the death of his patient though, and face their family. This particular worry has been around for a long time, and it's simply not true. Nobody involved in the medical field likes to lose a patient, so they will work long and hard to preserve life. A transplanted organ is not a guarantee that a person will live anyway, it's just a chance you can offer them. The patient you have at the moment is still alive, and you are trained to preserve life- not to purposefully lost them so you can potentially save another one. I assure you, if you are an organ donor, doctors will work just as hard to save you as they would if you were not.
